Roasted Tomatillo Garlic Salsa

Roasted Tomatillo Garlic Salsa
  • 1 ½ lbs. of Tomatillos
  • 7- 10 Serrano Chiles
  • 1 bunch of Cilantro (rinse clean with water)
  • 3 – 4 cloves of Garlic, unpeeled
  • 1 medium Onion
  • 2 teaspoons of salt 
 
Preparation:
Remove husks from Tomatillos and soak in warm water and rinse well with warm water.
Rinse Chiles with warm water.
On stove top using a Comal (or cast iron skillet) for best results – add tomatillos, chiles and garlic cook over medium heat for 10-15 minutes turning and moving them until evenly charred. Chiles and garlic will be done first, remove from skillet. Allow tomatillos to get evenly charred. 
Add the Tomatillos, Chiles and Garlic to a blender.
Use a ½ a cup of the bunch of cilantro, add to blender.
Cut medium onion in half and add to blender. Reserve ½ onion.
Add 2 teaspoons of salt. 
Puree in a blender.
Chop the remaining ½ of a medium onion and ½ a cup of cilantro and add to salsa.
Keep refrigerated.
